Baking bread with the breadmaker: step-by-step instructions

Almost every household now has one: breadmaking machines have become fashionable. When it comes to nutrition, many Germans simply like to have control over the food in their bread. Especially those who have food intolerances often bake their bread themselves.

If you buy your bread in the supermarket or at the bakery, you can’t be 100% sure what’s in it. Asking the staff is usually answered with an unenthusiastic shrug of the shoulders. Worse still : an employee tells you something wrong. Especially with food intolerances no fun.

But if you have bought your bread baking machine, you will of course need a a guide how to bake bread. To make this easier for you, we have written a step-by-step guide here.

Advantages of a breadmaker compared to an oven

Of course there are always people who prefer to do everything by hand. Is also nothing against it if you have too much time. If you are at home all day, you can of course make your own bread and bake it in the oven. If you don’t have a lot of time to spare, the automatic bread maker is simply a huge advantage. The bread machine takes over the kneading, rising and baking of white bread, wholemeal bread and mixed breads.

Even more exotic bread varieties, such as mixed bread with raisins and nuts, can be easily made in a good bread baking machine. Because good machines can independently add all kinds of ingredients to the dough at the end of the kneading process. For this purpose, these ingredients are placed in extra compartments of the bread machine beforehand.

But now let’s get started: take a quick look at the instruction manual of your breadmaker and check out the available functions. After that we can start. It is practical if you have a look at the page with the drawing of the key assignment. Then you will always find the appropriate function from our instructions.

Step 1: Set the bread maker& remove the baking pan

When you use the bread maker for the first time, make sure to remove all packaging carefully. Some manufacturers have foils in the baking pan on the surfaces, so that no scratches come into the product. Some customers are very sensitive. Although, of course, scratches will always occur in daily use.

Remove all the foils and take the baking pan, also called bread pan, out of the bread maker. Set the main switch of the machine to on beforehand.

NoteSome machines only need to be connected to the mains and do not have an on/off switch.

Especially if you are using the machine for the first time, you may need to attach the dough hook to it. If, however, there is already a kneading hook at the bottom of your bread pan (as shown in the picture on the left), then this is already done. If you have it separately in your package, refer to the instruction manual on how to assemble it. Once the dough hook is in place we can proceed to step 2.

Step 2: choose a recipe and prepare all the ingredients

Almost all manufacturers specify their breadmaking machines, usually in the operating instructions, with this device tested bread recipes at. These recipes have the advantage of producing a delicious bread in any case. The manufacturers have tested these recipes extensively with their automatic baking machines. Of course, you can also choose a recipe from one of the numerous internet pages. For this, just type in google search queries like:

  • Bread recipes for the breadmaker
  • Or enter the bread recipes for the breadmaker and your desired bread (for example wholemeal bread with raisins)

You will come across numerous recipes. It is best to choose recipes that have often been highly rated.

Our recipe tip for white bread

A recipe we have tried ourselves. Simply put all the ingredients into the baking machine in the evening and use the programming function. Then you get in the morning at the desired time a delicious white bread. This is still nice and warm and then of course tastes especially good.

Ingredients for 6 people:

  1. 500 grams of flour
  2. 300 ml water lukewarm
  3. 1 packet of dry yeast
  4. 1 teaspoon of sugar
  5. 15 grams of salt
  6. 2 tablespoons of rapeseed oil

Preparation in the baking machine

First, please put the yeast in the baking machine. the yeast should be at the bottom of the bread pan. Make sure the salt does not come into contact with the yeast before the kneading process begins. On the yeast first add the flour, the sugar and the salt. Then add the water and the oil.

Now either turn on the automatic baking machine right away or program it for the morning. With good bread baking machines, you can set the time when the bread should be ready. Then you do not even have to worry about how long it takes.

Step 3: Put the ingredients in the baking pan

Depending on the bread recipe, the ingredients are placed in the baking pan in different quantities and in different order. Here we do the same as with our just mentioned example-recipe.

In our bread recipe, we first put the packet of dry yeast into the breadmaker. For our white bread, this should be at the bottom, so that it does not come into contact with the salt.

Now add the 500 g flour to the bread pan and cover the dry yeast completely with it. This is important so that the salt does not meet the yeast before the kneading process.

Add sugar and salt

Now we add a teaspoon of sugar and 15 g of salt to the flour.

Water and oil

Then pour 300 ml of lukewarm water into the baking pan of the bread maker. Add the two tablespoons of rapeseed oil.

Other ingredients

Now it should be clear how easy it is to bake your own bread with such an automatic bread maker. Any other ingredients can be added now of course. How about adding some nuts or raisins for example?.

Step 4: place the baking pan in the bread maker

Now place the baking pan in the designated position in the automatic breadmaker. Most of the time you just put it from the top into the appropriate tray and sometimes you have to turn it a little bit so that the baking pan locks in place. This is important so that the dough hook also engages in the motor with drive. Then close the lid.

Select the right program

Now there are with most bread automats different programs, which one can select. In our case please select the white bread program. This is present in every machine, as it is a basic recipe so to speak. Often you can then select the browning level separately. Usually, three browning levels are provided here (see photo on the left: dark, medium and light).

Simply choose according to your individual taste. For the beginning we would recommend "medium". Often these basic breads can also be prepared with the standard program on the bread baking machines. Simply have a quick look at the operating instructions. However, good machines already have the white bread program on the display.

For example, if you have a recipe for wholemeal bread, select the appropriate wholemeal bread program.

Program the time when the bread is ready?

In high quality models, you have the possibility to program the baking process individually. To do this, select the desired time when the bread should be ready. For example, the next morning at 7:30 a.m. The bread machine then automatically starts the baking program at the right time, so that you get a warm and crispy loaf of bread punctually at 7:30 a.m.

Step 6: take the bread out of the baking pan

Once the bread is baked, all you have to do is take it out of the baking pan. To do this, open the lid, remove the baking pan from the bread maker and tip it over. Most bread pans have a very good non-stick coating. The bread then slides almost automatically with a little shaking from the baking pan. Let it cool down for a short time and your own bread is ready to bake.
