Why bread is so important to us?

Bread is still the number one staple food and enjoys great popularity, especially in Germany. There are more than 3,000 different types of bread in this country, according to the German Bread Institute, and in 2014 the German bread culture was even included in the "nationwide list of intangible cultural heritage" by the national UNESCO commission. In the pre-packaged and ready-cut bread from the supermarket, however, there is not much left of this artisan tradition.

More and more consumers who are not lucky enough to have a traditional bakery near them are therefore baking their own bread. the advantages are obvious: on the one hand, you know exactly what ingredients are in the bread and can do without unnecessary additives. On the other hand, you can adapt the bread to your own individual taste, try out new recipes and get creative. Even for gluten-intolerant people, baking your own bread is a smart solution. What’s more, you don’t have to stick to store opening times, but can enjoy fresh bread whenever you like. Thanks to the timer function, the machines can even do their work while you sleep, so that you wake up in the morning to the smell of freshly baked bread.

What can be made with bread makers besides bread??

Some of the test candidates can do a lot more besides baking bread, as the large number of automatic programs shows. Depending on the model, you have a choice of at least 13 programs (in the case of the rommelsbacher machine) and up to 33 programs (in the case of the panasonic machine). These include a cake program and baking programs for different types of bread, from white bread to wholemeal bread. The browning level can be set separately. In the case of the morphy richards model, 5 gradations are available for this, in the case of the other test appliances, 3 in each case.

In addition, the size of the bread can be adjusted individually, with 3 options to choose from, except for the rommelsbacher machine. In the case of the aforementioned candidate, there are only 2 sizes, whereby it should be noted that the maximum bread size also varies from model to model. While the panasonic machine can only bake breads weighing up to 600 grams (g), according to the manufacturer, the machines from rommelsbacher and morphy richards can allegedly handle up to 900 g, and the gastroback model even 1.000 g and the test candidate from eta can be used with 1.400 g bake the largest breads by far. Since the model has two dough hooks, two smaller bread pans can be used in addition to the large baking pan, or baguette pans can be used with the corresponding rack.

In addition to the basic bread programs, the panasonic and eta machines also have a special program for preparing sourdough breads. the panasonic machine is even equipped with a small sourdough spoon and two sourdough containers in which the dough can be prepared. Some of the models are also suitable for preparing jam or yogurt, and the gastroback candidate can even be used to make ice cream with the right accessories. In our test, however, these special functions are not included in order to ensure comparability of the results. Only the bread baking function is tested using a white bread with raisins and a wholemeal spelt bread with walnuts, as well as the cake function using a lemon sponge cake. Further recipe suggestions can be found in the respective operating instructions; the eta model even comes with a separate, beautifully illustrated recipe booklet.

Different settings on the breadmaker

Since the bread makers all work according to the same principle, filling them is equally uncomplicated. First the dough hook is used, then the basic ingredients are added to the baking pan. For additional ingredients, such as nuts and raisins, there is an extra compartment on all test machines except the eta model. The other ingredients are then added automatically at a later stage. In the case of the gastroback candidate, however, the compartment is unfortunately a bit small. Once the ingredients have been added, the only thing left to do is to set the right program. It is noticeable that the display labeling and program listing on the gastroback and morphy richards machines is in english, which could well be a criterion for exclusion for some users.

In the case of the panasonic model, the display labeling is also in english, but the list of programs is included in a number of languages as a sticker that can be stuck on the lid. For the breads we choose a standard program and, if possible, a white bread program. For the cake, we selected the standard cake program, although this is only a baking program on the panasonic and morphy richards models. The dough must be stirred beforehand, which is a clear disadvantage. When setting the program, it is noticeable that the buttons on the morphy richards and eta models do not respond as well. In addition, the display for browning and size is not easy to see on the latter, as the display is not at the front but at the top, and these details are shown at the bottom of the display. In the gastroback model, the display is also on top and the contrast is weak, which also makes it difficult to read. The rommelsbacher, gastroback and eta models are notable for their loud beeps at the end of the baking process.

The test winners among the automatic bread makers

The breads are baked after an average of 3.5 hours. The morphy richards model is the fastest, while the panasonic model takes the longest. In addition, it consumes more than four times the amount of electricity. A big ecological disadvantage, especially considering the comparatively small breads it can bake. All in all, the breads and also the cake are all easy to remove from the baking pan and the dough hook comes off by itself. If it fails to do so, the dough hook remover supplied (except for the morphy richards model) can be used to remedy the situation.

The results are also very good except for a few exceptions. Only with the candidate of morphy richards the bread and also the cake in the middle did not rise properly and with the device of panasonic somewhat irregularly. With the eta machine, the white bread becomes comparatively dark, even though the lightest browning level is set. In the rommelsbacher, the bread swells in the second pass, although only 870 g instead of the maximum permitted 900 g were filled in. And on the gastroback model, the ingredient compartment does not open during the first baking cycle, which means that the bread unfortunately does not contain walnuts. In addition, cleaning is made much more difficult here: the compartment cannot simply be removed and cleaned separately, as is the case with the other test candidates.
